I would like to share with you a recipe for a dish to which I am addicted. Generally, I really like eggs and traditional scrambled eggs were my favorite breakfast dish until I tried eggs with tomatoes. I fell in love with this simple and quick dish and I can't imagine breakfast without it, at least two times a week.
The recipe will appeal to everyone, including vegetarians because it does not contain meat ...
Ingredients for two people :
one small onion
half a can of shredded tomatoes
spoon of tomato paste
7 eggs
chili peppers, the amount depends on you, depending on how spicy you like it
salt, rapeseed oil for frying about 5 tbsp
Preparation
Fry the onion in oil for a few minutes, add the tomatoes, tomato paste, chili peppers, salt and fry for about 5 minutes. Break in the eggs and fry for about 3 minutes, stirring from time to time, but so that the eggs are not beaten.
Serve the eggs with fresh, dark bread.

We serve eggs with thin libabröd bread. We snack fresh green cucumber and fresh cabbage to soften the chili flavor. Place a spoonful of eggs on a piece of libabröd and eat it.
