Salad for Thursday, recipe for 4 people:
Ingredients:
- 1 coconut or 160 g of coconut flakes
- 1 package sugar peas (150 g)
- 6 radishes
- 2 spring onions
- 1 pcs. red chili
- 40 g unsalted peanuts
- a handful of fresh mint
- a handful of fresh cilantro
Lime sauce:
- 1 teaspoon sugar
- 1 spoon rice vinegar
- rind from 1 lnames
- 0.5 lime juice
- 3 spoons oil
A method of preparing:
- Start by cleaning the coconut and grating it roughly, then pour it into a bowl. If you already use ready-made coconut flakes, just put them in a bowl.
- Then, cut the sugar peas lengthwise, cut the radish and spring onions into thin slices and put them in a bowl into the already grated coconut.
- Finely chop the chili, and do the same with peanuts and herbs. Then put it in a bowl and mix all ingredients together.
- Start making the lime sauce by mixing sugar, rice vinegar, lime zest, lime juice, and oil in a separate bowl.
- Then pour the sauce over the salad and mix everything well.
