Wednesday salad, recipe for 4 people:
Ingredients:
- 200 g walnuts
- 100ml maple syrup
- teaspoon cinnamon
- a pinch of cayenne pepper
- a teaspoon of dried coriander
- pinch only
- 200 g fresh spinach
- 70 g arugula
- 1 garnet
- 100 g dried cranberries
- 200 g feta cheese
For dressing:
- 50ml balsamic vinegar
- 2 tsp coarse mustard
- 50ml olive oil
- salt and pepper
A method of preparing:
- Start by preheating the oven to 190 ° C.
- Then mix the walnuts, maple syrup, cinnamon, cayenne pepper, coriander and salt in a bowl and place on a baking tray lined with baking paper.
- Then put the tray in a preheated oven on the middle shelf and bake the nuts for 15-25 minutes or until golden brown. Remember to turn them 2-3 times during cooking.
- Remove the nuts from the oven and allow them to cool completely.
- Then rinse well and dry the spinach and arugula, you can use a sieve. Put the salad in a wide salad bowl or bowl.
- Cut off the bottom and top of the pomegranate and cut the peel, then use your hands to break the pomegranate in half. Choose red seeds and mix with salad and dried cranberries, sprinkle with feta cheese.
- In a separate container, mix the ingredients for the dressing, you can add some water if you find the dressing too thick. Finally, pour half of the sauce over the salad and serve the rest of the dressing alongside the salad.
