Salad for Monday, recipe for 4 people:
Ingredients:
- 300 g chicken breasts
- half iceberg lettuce
- 2 chives stalks
- half cucumber
- 1 yellow pepper
- 400 g cooked rice
- handful bread croutons
- handful sprouts
Dressing:
- 100ml pesto
- 2 spoons vinegar
- 2 spoons oil
- pepper
A method of preparing:
- Start by frying the chicken with salt and pepper, then divide it into smaller pieces.
- Finely chop the lettuce and chives, and dice the peppers and cucumber.
- Then mix the chicken, lettuce, vegetables and rice in a bowl and sprinkle the top with the croutons and sprouts.
- Mix the ingredients for the dressing and pour a little over the salad, and serve the rest.
