with chicken is a delicious substitute for a traditional taco. It's delicious, deartower and colorful salad with chicken, avocado and beans. The salad is tas good for a Friday taco as for lunch on a regular Tuesday.
Salad for Friday, recipe for 4 people:
Ingredients:
- 400 grams grilled chicken
- 2 spoons oil
- 1 spoon spices for tacos
- 0,5 red onion
- a package of cherry tomatoes (250 g)
- a handful of fresh cilantro
- 2 boxes canned beans (285 g)
- a package of baby spinach (65 g)
- handful tortilla chips
- lime in boats, to serve
- green chilli to serve
- sour cream for serving
Guacamole:
- 2 pcs. an avocado
- 1 spoon lime juice
- 1 clove garlic
- 2 spoons fresh coriander
A method of preparing:
- Start by making guacamole. Divide the avocado in half and then use a knife to carefully remove the pits from the avocado. You do this by stabbing the knife into the pit, then move the knife from side to side, and the pit will come out by itself. Also remove the skin, mash the flesh with a fork in a bowl and squeeze the lime juice into it. Then add the finely chopped cilantro and garlic. For better flavor, you can season with salt and pepper.
- Cut the grilled chicken into thin strips. Then put the chicken in a bowl, and add the oil and taco seasoning. Mix everything so that it is distributed over the entire meat. If you find the chicken to be spiced up, don't hesitate to add more seasoning.
- Then, cut the red onion into thin slices. Cut the cherry tomatoes in half and toss with the finely chopped coriander.
- Pour the water out of the canned beans and rinse well in cold water, this can be done in a sieve, for example.
- You can serve the salad in two ways, either put all the ingredients in a bowl and mix them together, or serve each portion separately. If you choose the second option, start by lining the plate or bowl with spinach, for this use seasoned chicken, red onion, cherry tomatoes, tortilla chips and a spoonful of guacamole and cream on top. Garnish with lime, fresh cilantro and possibly thin slices of green chili if you like spicy dishes.
