Carnival time goes on and with it time to bake donuts! It is not said that we only eat donuts on Fat Thursday or Shrovetide. But on these days we are obligatory to eat them!
I prefer donuts with marmalade, covered or sprinkled with powdered sugar.
I offer you a proven recipe for homemade, delicious, real donuts. Naturally, they taste best when warm.
Delicious donuts with marmalade
Ingredients for about 39 pieces:
1 kg of wheat or cake flour
8,5 grams of fresh yeast
10 grams of sugar
6 egg yolks
1 egg
about half a liter of warm milk
10 dag butter
1 level teaspoon of salt
1 vanilla pod or vanilla flavor
2 tablespoons of spirit or vodka
the juice and zest of one lemon
marmalade
rapeseed oil for frying
Preparation
Grind the yeast with 1 tablespoon of sugar, 1 cup of flour and 1/3 cup of lukewarm milk so that the thickness of the leaven corresponds to the thickness of the cream. Cover with a cloth and set aside in a warm place to rise for about 20-30 minutes.
Beat the egg and yolks with sugar, add the remaining flour, leavened leaven, vanilla, finely grated lemon zest and squeezed lemon juice, the rest of the milk, salt and alcohol. Knead the dough for about 10 minutes. At the end of kneading, gradually add the melted butter. The dough should be smooth, shiny and easy to handle.
Put the kneaded dough into a bowl greased with oil, cover it with a cloth and leave it to rise for about an hour.
Place the risen dough in portions on the board. Roll out each portion into a cake about half a centimeter thick. Cut out discs with a glass. Place a teaspoon of marmalade in the center of each disc, stick together and form small balls. Place the donuts formed in this way, sticky side down, on a surface sprinkled with flour. Leave to rise for about 30 minutes.
Fry the donuts in very hot oil for about 1 minute on each side.
NOTE: fry the donuts upside down first, which prevents the marmalade from leaking out.
Put the fried donuts on a paper towel to drain the excess fat. Sprinkle with powdered sugar while still warm.
