A warming carrot soup is a perfect idea for dinner. You are after work, the weather is not too nice either, because autumn is coming and you have to eat dinner. Instead of spending money ordering food that might not be right for you, try making a delicious carrot soup with a hint of ginger and lime yourself to keep you warm on an autumn day. The soup can be both vegetarian and with meat.
For a portion for 4 you will need:
- (1 chicken breast)
- 800 grams of carrots
- 4 pieces of shallots
- 3 garlic cloves
- ½ chilli
- 3cm of fresh ginger
- 8dl of vegetable broth
- 3dl sweet cream
- 3 tablespoons of butter for frying
From spices you will need:
- Lime
- Salt or vegeta
- Cayenne pepper or regular black pepper
- Sweet pepper
- Granulated garlic
- Coriander optional
Start making the soup by peeling the carrots and ginger, then grate them.
Then, finely chop the onion, chili, and garlic. If you want to add meat, also cut it into medium cubes.
In a saucepan, melt the butter and fry the vegetables and meat over low heat. Already at this stage, you can lightly season your dish with veggie and cayenne pepper. Fry until the onion is shiny. If the chicken hasn't fried, it's okay as it will continue to cook.
Then pour everything over with water, to which you will add 2 bouillon cubes (vegetable or poultry, the choice is yours). Cook covered until the carrots are tender and the chicken is not raw, this takes about 20 minutes.
Pour in sweet cream and use a hand blender to blend the soup until smooth.
Season with lime juice and the rest of the spices. If you like, sprinkle the soup with coriander while serving.
