I propose a recipe for a quick and healthy cake without baking!
The taste of dark chocolate combined with orange not only reminds us of Christmas, but also suits the winter atmosphere. It is in winter that oranges taste best and chocolate improves mood.
The cashews contained in the batter are a treasury of potassium that lowers blood pressure. Cashews support the functioning of the nervous system thanks to the content of B vitamins, especially niacin, which soothe the nerves, give energy, and improve concentration and memory. They also have calming properties due to the potassium and magnesium content.
There is no need for an oven to make the dough, and it does not contain sugar or flour. You can make them in a moment with a blender, using fresh and dried fruit, spices, seeds and nuts.
Ingredients (for a cake tin with a diameter of 16 cm):
1/2 cup of almonds
1/2 cup of dried dates
pinch of salt
1.5 cups of cashews
1/3 cup of juice from lemons
1/3 maple syrup
1/2 cup of dark natural cocoa
1/3 cup coconut oil
a teaspoon of vanilla extract
Execution:
Soak the cashews for night in a bowl of water. Chop the dates finely and blend them together with almonds and a pinch of salt. Place the resulting mass (it should be quite compact) into the cake tin - the bottom of the cake is ready. Now melt the coconut oil and blend it with soft cashews, lemon juice, maple syrup, cocoa and vanilla extract. Place the smooth mass in advance prepared the base and put it in the freezer in half hours. After this time, the cake is ready - you can decorate it with chocolate icing made from a mixture of liquid coconut oil and a few tablespoons of raw cocoa, as well as with slices of fresh orange.
