. A healthy and filling salad with delicious hot smoked salmon. You can make the salad in a jar with basil dressing at the bottom as it then keeps all the vegetables looking fresh and staying crisp and good until you eat the salad, it's also an easy way to take it to work for example. You can also mix all the ingredients in a bowl and serve the sauce on the side.
Saturday salad, recipe for 4 people:
Ingredients:
- 1 broccoli
- 200 g quinoa
- 400ml cooking water
- 1 pcs. mango
- 4 pcs. spring onions
- 1 package baby spinach (65 g)
- 400 g hot smoked salmon
- a handful of croutons
Basil dressing:
- 1 pot fresh basil
- 2 spoons oil
- 6 spoons sour cream
- salt and pepper
A method of preparing:
- Start by making the basil dressing. Mix the basil leaves and the oil with a hand mixer, then mix the resulting mass with the cream and season with salt and pepper. Pour a little dressing into the bottom of the jar with the lid on.
- In a small saucepan of water, cook the quinoa according to the instructions on the package. You can lightly salt the water.
- Then divide the broccoli into small bouquets and place them in a jar.
- After cooking the quinoa, leave it to cool down, and pour the already cooled quinoa into a jar and add finely diced mangoes on top of it. Cut the spring onion into thin slices and add to the jar along with the spinach.
- Divide the fish into small pieces and put them on the spinach in a jar, then add the croutons. You can eat the salad right away or close the jar and put it in the fridge. Remember to leave the salad upright until you eat it, then the vegetables will stay fresh and crispy. When you eat the salad, turn the jar upside down a few times so that the dressing is mixed with the rest of the salad.
