Today we are going to prepare a cauliflower cream soup. It can be said that the tree soup is because, in cross-section, cauliflower resembles a tree. Making soup is really quick and easy. Once ready, you can serve it with a little crispy bacon or boiled asparagus, with or without croutons. You decide for yourself!
Thursday soup. Recipe for 4 people:
- 1 cauliflower
- 1/2 onions
- 8 dl water
- 2 bouillon cubes (poultry or vegetable)
- 2 dl milk
- 6 patches bacon
- 1 packet of asparagus
- 4 slices bread
- parmezan
- salt
- pepper
Start by cleaning the cauliflower and dividing it into smaller bouquets.
Then toss the cauliflower bunches into a saucepan, along with the chopped onion. Pour everything over with water and milk, and add the bouillon cubes. Then bring to a boil and cook until the vegetables are tender.
Meanwhile, cook the asparagus in a separate pot in water with a little salt. While the asparagus is cooking, cut the bacon into smaller pieces and fry it crispy in a pan. Bake the bread in the oven until it is crispy and cut it into small cubes.
After the cauliflower has softened, blend it with a handheld robot until smooth. Then season the soup with salt and pepper.
Serve the soup with asparagus, bacon chips and croutons. And for that, add Parmesan.
